What yellow concentrated vanilla is

Vaniglia Concentrata Gialla is a professional semi-finished product for gelato and pastry work: a dense, homogeneous paste made from vanilla pods and natural flavourings, designed to add colour and aroma in a single step. Unlike liquid extract, the paste carries body and intensity, and does not fade with prolonged cooking or churning. The yellow colour is deliberate: it gives vanilla gelato that full, warm look customers recognise in the display case, distinct from the natural white of the base. It is dosed directly into the mix, with no further preparation needed in the kitchen.

Origin: from Mexico to Madagascar

Vanilla is the fruit of an orchid, Vanilla planifolia, native to Mexico, where the Totonac people already cultivated it before the Aztecs paired it with cocoa. After the Spanish conquest of Mexico in the sixteenth century, the Spanish brought it to Europe, but for centuries Mexico remained the only producer: elsewhere the flower blooms but bears no fruit, because the pollinating insect is missing. The turning point came in 1841 on the island of Réunion, where young Edmond Albius developed manual pollination, flower by flower. From there cultivation spread across the Indian Ocean and Bourbon vanilla was born, with Madagascar becoming the world's leading producer.

Yellow, white or bourbon: a matter of style

In gelato making, vanilla comes in several versions, and the choice changes the result in the display case. This paste is the yellow version: concentrated, with no visible pod specks, made to give gelato that warm, marked colour recognised as the classic vanilla gelato. It differs from white vanilla, which leaves the base neutral and shows the black dots of the seeds in suspension, a more natural effect. It also differs from bourbon vanilla, tied to pods from Madagascar and the Indian Ocean. The producer: from liqueur to gelato, since 1959

Behind this paste is a long-established Palermo company, founded in 1959. It did not start with gelato: at first it produced liqueurs for the bars of the city, where the bar was the centre of social life. The turning point came when a flavour conceived as a liqueur, zuppa inglese, proved perfect once carried into gelato. The company then changed trade and moved into semi-finished products for gelato shops, developing one of the first balanced gelato bases. More than sixty years on, that double origin, between liqueur making and cold-kitchen work, is still felt in the care given to ingredients such as vanilla.

How to use it in gelato and pastry work

The recommended dosage for gelato is 50 g of paste per litre of mix; when working directly on the base, without the full mix, it drops to about 30 g per litre, adjusted to the colour and aroma intensity desired. It dissolves into the white mix before churning, and should be stirred well before use, as the aromatic part tends to settle at the bottom of the tin. In pastry work it performs just as well in pastry cream, chantilly, mousses, semifreddo, biscuits and baked goods, where a single spoonful gives colour and vanilla scent. It is the paste made for the classic vanilla gelato seen in every display case.

Format and storage
