What this ripple is

Amarena 6 kg is a ripple for gelato and pastry work from the tuttaFrutta line: dense, deep red syrup with sour cherries immersed in their own syrup. It is not a paste to dissolve into the mix before churning: it is a product for cold application, meant to go onto gelato that is already finished, somewhat like a premium jam but built for the cold. The bright colour and the fruit clearly visible in the syrup make it suitable both for the display case and for pastry work where the amarena needs to stay recognisable as a physical piece, not dissolved into the batter.

Amarena: Prunus cerasus, marasca and visciola

Amarena is the fruit of Prunus cerasus, native to Asia Minor, between Armenia and the Caucasus, grown today mainly in Piedmont, Veneto and Emilia-Romagna. The same species also gives visciola, darker and slightly sweeter, and marasca, almost black and distinctly more sour, from which maraschino liqueur is made. Amarena stands out for its lighter colour and a clean, tart flavour that keeps its structure when cooked in its own syrup. In Italy the preparation of amarena in syrup is an old tradition, rooted above all in Emilia-Romagna, where the fruit cooked in its own syrup became a classic of pastry and gelato making, passed down in artisan workshops.

Ripple, not paste: the technical difference

The difference between a ripple and a mix paste is technical, not marketing. The paste dissolves into the liquid mix before churning and flavours the whole batch; the ripple is added afterwards, cold, onto gelato already churned, layered in the tub or dosed with a ripple machine during extraction. A good ripple must stay soft even at display-case temperature, around -14/-16°C, thanks to the balance of sugars and glucose syrup in the recipe. If the product freezes solid and cracks under a spoon, it is not working as a ripple but as a plain cold jam.

The producer: from liqueur to gelato, since 1959

Behind this tin is a long-established Palermo company, founded in 1959. It did not start with gelato: it distilled liqueurs for the bars of Palermo, in a city where the bar was the centre of social life. The turning point came with semi-finished products for gelato shops, starting from a flavour conceived as a liqueur, zuppa inglese, which proved ideal once carried into gelato. The company then changed trade and moved into pastes and ripples for the industry, developing one of the first balanced gelato bases. More than sixty-five years on, that double origin, aromatic and technical, is still felt in its products, including this amarena ripple.

How to use it in gelato and pastry

The correct way to use this ripple is cold, never dissolved into the liquid mix. In the tub it is spread in alternating layers with gelato fresh out of the batch freezer, to build the classic red veining; on a production line it can be dosed with a ripple machine. Outside gelato, the fruit and dense syrup work well to fill cakes, tarts, semifreddo and spoon desserts, where they stay visible. It pairs well with fior di latte, vanilla, dark chocolate, stracciatella and cheesecake, where the deep red creates a clear contrast against pale bases. Stir gently before use.
