What mixed pasta is

Mixed pasta, known in the Neapolitan tradition as «munnezzaglia», was born as a humble dish of leftovers: shopkeepers gathered the broken ends of different pasta formats and sold them together at a low price. Lenta Lavorazione® method

Lenta Lavorazione® is a slow production protocol certified by Bureau Veritas since 2013. The dough rests longer, drying takes place at low temperature, and the pasta is bronze-influenced to obtain a rough, porous surface. The result is pasta that holds its shape and bite even in long cooking and in re-heated service, and that captures sauces and seasonings far better than smooth, fast-dried pasta.
