What Orecchiette Are
The orecchietta, literally “little ear”, is the signature pasta shape of Puglia in southern Italy. Its concave shell is traditionally shaped by dragging and turning a small disc of dough with a knife and thumb. That hollow is not decorative: it traps sauce and holds onto vegetable-based dressings far better than a flat shape, which is why orecchiette are the backbone of Apulian home cooking.
