What Are Sour Cherries
Amarena, visciola and marasca are all varieties of the same species, Prunus cerasus, distinct from the sweet cherry (Prunus avium). Across Italy and Central Europe their bright acidity has made them the classic fruit for preserves, syrups and liqueurs such as maraschino, because tartness survives cooking and sweetening where a sweet cherry would turn flat.
Characteristics
