A young, fresh sheep's-milk pecorino with black pepper under the Bucaro brand, supplied as a quarter wheel of about 2 kg. "Primo sale" means first-salting: a short-aged cheese that is soft, milky and mild, here lifted by the warm bite of pepper.
How to use it in the kitchen
Being young and tender, it shines fresh: on cheese boards and aperitivo, cubed into salads, grilled or pan-seared, baked on bruschetta and pizza, or paired with broad beans, honey and tomatoes. The pepper makes it a flavourful table cheese in its own right.
