Come Conservare Correttamente i Prodotti Freschi Italiani
LAPA - finest italian food GmbH, Paul Teodorescu

A fresh product that arrives late — or is stored incorrectly — can compromise your entire Saturday evening service. You already know this: in a professional kitchen, freshness is not a perk. It is the foundation of every great dish.

LAPA is your B2B food wholesaler specialising in premium Italian products. Every day, we select from over 2,000 references and deliver directly to the best restaurant kitchens across Switzerland — with an unbroken cold chain and the reliability you can build your business on.

This guide is designed to help you get the most out of every delivery.

Fresh Mozzarella: handle with precision

Slice a mozzarella in half and watch the milk flow slowly — that moment vanishes quickly with improper storage. Mozzarella is one of the most delicate products we carry:

  • Temperature: 4–8°C, no fluctuations
  • In its liquid: never remove it from the preservation whey
  • Consumption: within 3–5 days of opening
  • Never freeze: texture and flavour are permanently lost

LAPA tip: order for 2–3 days at a time. No minimum order holds you back.

Burrata: a 48-hour window of excellence

Burrata is even more perishable than mozzarella. Its creamy heart deteriorates quickly:

  • Temperature: 4–6°C
  • Consumo: entro 48 ore dall'acquisto
  • Service: remove from the refrigerator 30 minutes before serving — room temperature unlocks the full flavour profile

Cured Meats and Cheeses: every product, its own conditions

Improper storage costs margin and reputation. Follow these standards:

  • Whole cured meats: 12–15°C, dry and ventilated environment
  • Sliced cured meats: refrigerated at 4°C, consume within 3 days
  • Fresh cheeses: refrigerated at 4–6°C
  • Aged cheeses: 8–12°C, wrapped in food-grade paper — never plastic wrap

Fresh Vegetables: respect the source

Italian vegetables carry the character of their origin. Proper storage preserves that character:

  • Tomatoes: room temperature, away from direct light — refrigeration destroys flavour and texture
  • Basil: in a glass of water at room temperature
  • Verdure a foglia: in frigo, avvolte in carta umida
  • Garlic and onions: cool and dry, never refrigerated

The Cold Chain: our commitment

LAPA maintains an unbroken cold chain from our warehouse to your kitchen. Our refrigerated vehicles keep every product category at its optimal temperature. From producer to your kitchen in 24 hours.

Stock Rotation: the method that protects your margins

  • Apply the FIFO method (First In, First Out)
  • Check expiry dates every morning before service
  • Order quantities matched to actual sales — with LAPA, small orders are always possible, no minimums

The result

A refrigerator that is always in order. No waste, no unpleasant surprises before service. Guests who return because the quality never wavers.

This is what LAPA delivers — every day. Over 2,000 premium Italian products, reliable delivery, no minimum order.
