Preparation and cooking

The frozen borage can be used straight from the freezer, without prior thawing. For fillings (pansoti, ravioli, savoury pies) it is advisable to sauté it for a few minutes in a pan or blanch it, then squeeze it well to remove excess water before chopping and combining it with ricotta, eggs and cheese. For soups, it is added directly to the pot in the last minutes of cooking. For fritters, after a brief blanching, it is dipped in batter and fried. Dose the quantity according to the recipe, bearing in mind that the frozen leaf releases part of its water during cooking.
