They are ready to use straight from the tin, just drain, and the neutral sunflower oil lets the artichoke flavour come through without masking it. A Note on the Oil
These artichokes are preserved in sunflower seed oil, not olive oil. Sunflower oil is neutral and economical and does not overpower the vegetable, which is the food-service standard for high-turnover preparations.
Professional Uses
Pizza topping (40-60 g per 30 cm pizza, drained well so it does not wet the base); mixed antipasti and boards (50-70 g per portion with cured meats); pasta and risotto (about 80 g per portion); and bruschette, focaccia and panini fillings (30-40 g per slice).

Drained weight is 1.4 kg out of 2.4 kg gross (about 58% edible), so calculate food cost on the drained weight, roughly 20-23 portions per tin.
Storage
Keep in a cool, dry place before opening, as the sterilised tin has a long shelf life. After opening, transfer to a non-metal container, cover with the oil, refrigerate at 0-4 C and use within a few days.
