Knorr Stocki: Swiss mashed potato ready in under 2 minutes
Knorr Stocki is Switzerland's best-known instant mashed potato flake preparation. The 100% natural-ingredients version is made with 99% Swiss potatoes from sustainable farming, gluten-free, with only turmeric and a natural antioxidant from rosemary extract added. The 440 g pack contains 4 resealable sachets of 110 g, for a total of 12 servings. In professional kitchens it delivers a creamy, consistent mash ready in minutes, with no peeling, boiling or mashing of fresh potatoes.
What Stocki is
Stocki is a dehydrated potato flake: Swiss potatoes are cooked, mashed and dried into flakes that rehydrate instantly on contact with hot liquid. The result is a mash with a clean potato taste, no lumps and an always-identical yield. It is a long-shelf-life product, light to store and waste-free, two decisive advantages for high-volume catering.
Origin and producer
Stocki is a historic Knorr brand. The Knorr group was founded in 1838 in Heilbronn, Germany, while Swiss production began in 1907 in Thayngen, in the canton of Schaffhausen. The Knorr plant in Thayngen, today part of Unilever Switzerland, has been the Swiss benchmark for soups, stocks and potato preparations for over a century. The potatoes used in Stocki are 99% from sustainable Swiss agriculture.

Preparation
For each sachet (3 servings): bring 4 dl of water to the boil with half a teaspoon of salt and 15 g of butter to taste. Remove from heat, add 2 dl of cold milk, pour in the sachet contents and press with a spoon until all flakes are covered with liquid. Let rest for about half a minute, then stir briefly. For large volumes keep the same ratio and work in a large pot.
Professional kitchen uses
Classic side dish for roasts, braised meats, stews, baked fish and meat plates. Quick base for potato gnocchi, croquettes and patties. Top layer for gratins and potato cakes. Natural thickener for soups, veloutes and vegetable creams. Filling for potato ravioli, dumplings and pies. Soft bed for serving stews and ragu.
Pairings
It pairs with brown butter, nutmeg, chives, Swiss melting cheeses, sausage and Cervelat, red-wine braises, sauteed mushrooms and meat sauces. For an Italian touch, excellent with ragu, grated Parmigiano and extra-virgin olive oil.
Mistakes to avoid
Do not pour the flakes into water still on the heat: lumps will form. Do not exceed the indicated liquid quantities, otherwise the mash stays too runny. Do not add boiling milk all at once: cold milk at the end keeps the light colour and creaminess. Storing the product in a damp place reduces the fragrance of the flakes.
