What the Taggiasca olive is
The Taggiasca is a small, elongated olive of the Ligurian Riviera, hand-picked on the terraced hillsides of the Imperia and Taggia hinterland, from which it takes its name. Brought to Liguria centuries ago and historically linked to the cultivation expanded by the Benedictine monks of the area, it is prized as a dual-purpose cultivar, used both for a delicate, sweet extra virgin olive oil and as a table olive. Its flavour is mild and fruity, with only a hint of bitterness and a soft, buttery flesh that sets it apart from larger, sharper table olives.
Geographic origin
These olives come from the Ligurian Riviera di Ponente, the western coast of Liguria in the province of Imperia, the historic home of the Taggiasca cultivar. The microclimate of the terraced groves between sea and mountains gives the olive its characteristic sweet, fruity profile.

Sensory characteristics
Soft, fleshy texture, sweet and fruity taste with a barely perceptible bitter note typical of the cultivar. The covering extra virgin olive oil is fragrant and lends itself to being reused to dress the same dish. Being pitted, the olives are immediately usable in mise en place with no preparation time.
