What giardiniera is
Giardiniera (literally "from the garden") is a traditional Italian sottaceto: seasonal vegetables cut into pieces and preserved in wine vinegar. Crisp, tangy and lightly sweet-sour, it brings freshness and acidity that cuts through rich, fatty foods.
Culinary uses
Serve as an antipasto or on a salumi and cheese board; chop into sandwiches, piadine and panini; spoon over grilled meats and boiled meats (bollito); fold into salads and rice; or use as a bright, acidic garnish wherever a dish needs lift.

Serving tip
