What Russian Cigarettes are
Russian cigarettes (sigarette russe) are crispy wafers, close relatives of the French langues de chat, cooked thin and then rolled around a cylinder while still warm to obtain the characteristic cigarette shape. In Sicily, particularly in the Palermo area, this format is known as Surprise: a crunchy wafer that, when filled with sweetened ricotta cream and chocolate, literally bursts in the mouth at the first bite. This pack provides the plain wafer shells, leaving the pastry chef free to fill, dip or use them as they prefer.
Origin and tradition
The Surprise are typical of the Palermo area but widespread throughout Sicily and Italy. Made in Sicily, these wafers carry the artisanal know-how of small Italian pastry, where the thin cialda batter (egg white, sugar, flour and fat) is the same family of preparation used for ice cream wafers and rolled biscuits.
Sensory profile
