How to Prepare
Whisk one 500 g sachet into 1 litre of room-temperature water (or 1.5 litres of milk) for 5 minutes, then rest a few minutes before use. Yield: about 1.5 litres of pastry cream per sachet.

Fill bigne and eclairs, tarts and crostate, mille-feuille, brioche and cakes; base for diplomatic cream and chiboust; or a quick creme patissiere for spoon desserts.
