What is Grana Padano PDO
Grana Padano is a hard granular cheese produced in the Po Valley under the PDO (Protected Designation of Origin) scheme since 1996. Made from partly-skimmed raw cow's milk, salt and rennet, it ripens for at least 9 months. The long ripening breaks down lactose almost entirely, so mature Grana Padano contains less than 0.01 g of lactose per 100 g and is suitable for the lactose-intolerant.
Latteria Sociale Mantova (LSM)
LSM is a historic cooperative founded in 1929 in Mantua, gathering milk from member farms in the Mantova PDO zone. The dairy produces and ages Grana Padano under HACCP and IFS Food protocols, with full traceability of each wheel.
