What Grana Padano DOP is

Grana Padano is a hard, granular, cooked-curd cheese made from cow's milk in the Po Valley and protected by a PDO (DOP) designation. Its name comes from grana, the grainy texture of its long-aged paste. It is one of the world's most consumed PDO cheeses, made to a strict consortium specification that governs milk area, feed, processing and minimum ageing.

Origin

Production is limited to a defined area of northern Italy across the Po Valley, spanning regions such as Lombardy, Veneto, Piedmont, Emilia-Romagna and Trentino. This cube comes from Lombardy, the historic heartland of Grana Padano.

The producer

It is produced by Latteria Sociale Mantova, a cooperative dairy in the Mantua area of Lombardy that works local cow's milk into Grana Padano DOP under the consortium's rules. Cooperative dairies like this are the backbone of authentic Grana production.
