What is smoked scamorza?
Scamorza is a pasta-filata (stretched-curd) cow's milk cheese from southern Italy, close to a drier, firmer mozzarella, traditionally shaped like a small pear and tied at the neck. The smoked version (affumicata) is smoked, here with beechwood, which gives a golden rind and a distinctive smoky aroma. It is firmer and less watery than mozzarella, so it slices, grills and melts cleanly.
Tamburro, dairy from Molise
This scamorza is made by Latticini Molisani Tamburro in Baranello, in the province of Campobasso (Molise), with pasteurised cow's milk and traditional pasta-filata craft. The milk is of EU origin and the cheese is produced in Italy. Tamburro is a reference dairy in LAPA's fresh Italian cheese range.
How to use it
Slice it for grilled scamorza, melt it on pizza, panini and toasties, or bake it in gratins and stuffed vegetables, where its smoky note shines. It also works on cheese and charcuterie boards, in arancini and baked pasta. Because it is firmer than mozzarella it grates and slices cleanly and browns well under the grill.
