What is pasteurised liquid egg white?
It is fresh egg white separated from the yolk and gently pasteurised to be free of salmonella, then packed liquid in an aseptic Tetra Pak. No shells to crack or dispose of, no separation work and no risk of stray yolk — just ready-to-use protein with reliable, repeatable performance.
How to use it in the kitchen
Whip into meringues, macarons and mousses; clarify consommés and jellies; use as a binder for coatings and farces; lighten batters; or add protein to bakes and drinks. As the volume is exact, recipes scale precisely in volume production.
