What are IQF extra-fine green beans?
Extra-fine (finissimi) green beans are the slimmest grade of green bean, prized for their tenderness and bright colour. IQF stands for Individually Quick Frozen: each pod is frozen separately at very low temperature immediately after harvest, locking in colour, texture and nutrients and preventing the beans from clumping into a block. The result is a convenient, consistent vegetable available all year, sourced in the EU.
Cooking
Cook from frozen, with no defrosting needed. Blanch or boil in salted water for a few minutes until tender-crisp, or steam, saute or roast directly. For service, blanch and refresh in iced water to fix the green colour, then finish to order with butter, garlic, almonds or olive oil. Avoid overcooking so the beans keep their bite and bright colour.
