What grilled aubergines are
The aubergine (Solanum melongena) is a pillar of Mediterranean and southern Italian cooking, from Sicilian parmigiana to caponata. Grilling without oil concentrates the flavour and gives the slices the characteristic charred grill marks while keeping the flesh tender. Freezing immediately after grilling preserves the product as if freshly made, removing seasonality and the long preparation work of washing, slicing, salting and grilling fresh aubergines.
