What Is Laminated Raw Puff Pastry?
Laminated Raw Puff Pastry is a professional frozen semi-finished product supplied in 550x370 mm sheets. It is made without hydrogenated fats and comes in a 10 kg case of 1 kg packs, ten sheets per kilo. Raw and ready to roll, it gives a kitchen restaurant-quality puff pastry on demand without laminating dough in house.

The pastry is made by San Giorgio in Castel San Giorgio, in the province of Salerno, a producer of frozen bakery and pastry semi-finished goods for foodservice. The large sheet format gives chefs and pastry cooks the freedom to cut the exact shapes they need for both savoury and sweet recipes.
How to Use
Roll out the pastry while it is still semi-thawed, cut to shape and bake in a hot oven until golden and well risen. Do not refreeze once thawed, and consume within 24 hours of baking. The absence of hydrogenated fats gives a clean, crisp puff suited to fine pastry work.

Storage and Cold Chain
Keep the product frozen at -18 C throughout storage, transport and display. Once thawed it must not be refrozen. Contains gluten (wheat, barley) and may contain soy, nuts, milk, eggs, fish and mustard. Check the pack label of the lot before serving.
