What Is the San Marzano dell'Agro Sarnese-Nocerino PDO Tomato
San Marzano is the most celebrated canning tomato in Italian gastronomy. It gained great recognition in the early 1900s with the rise of the first preserving industries of the Agro Nocerino-Sarnese, the fertile volcanic plain between Naples and Salerno. After a drastic decline in the 1980s, the recovery of the pure genetic lines led by the Campania Region and the Protection Consortium relaunched it internationally. The Protected Designation of Origin was recognised under Regulation EC 1236/96.
The PDO standard guarantees the elongated fruit shape, firm flesh, low seed count and the typical sweet-acid balance. Quality parameters of this product: soluble solids over 6.0 °Brix, pH below 4.5, wholeness over 65%, skins below 2 cm2 per 100 g.
The Producer: Agriconserve Rega, Striano, Since 1965
Agriconserve Rega was founded in 1965 by farmer and entrepreneur Luigi Rega in Striano (Naples), in the heart of the Agro Nocerino-Sarnese. In six decades the company has grown from a farm into a canning industry of excellence while keeping a short, controlled and sustainable supply chain deeply linked to the territory. Today, with its Rega, Strianese and Zia Rosa brands, it reaches more than 40 countries worldwide.
Organoleptic Profile
Typical deep red colour, firm texture, characteristic fresh tomato aroma and a flavour that balances natural sweetness with the lively acidity of the volcanic soil. The tomatoes are processed quickly after harvest from sound, ripe fruits and pasteurised, with no additives: the can contains only whole peeled tomatoes and tomato juice.

Professional Uses in the Kitchen
For Neapolitan pizza STG, crush the tomatoes by hand or pass them coarsely, season with salt only and spread 80-100 g per 33 cm disc: no pre-cooking, the sauce cooks in the oven in 60-90 seconds at 430-485 °C according to the AVPN standard. The 2.5 kg can yields roughly 15-18 pizzas.
- Neapolitan ragù: long, slow simmering for at least 3-4 hours with beef and pork cuts
- Slow-cooked sauces: the low pH and high Brix give body without added concentrate
- Parmigiana di melanzane: coarse-milled pelati for a sauce with texture
- Spaghetti al pomodoro: 100-120 g of crushed pelati per portion, fresh basil at the end
Common Mistakes to Avoid
- Blending the tomatoes at high speed: it incorporates air and seeds, making the sauce bitter and pale
- Pre-cooking the sauce for Neapolitan pizza: the AVPN standard expects raw crushed tomato
- Storing the opened can in the fridge: always transfer the unused product to a food container, keep at +3/4 °C and use within 3 days
