Gi.Metal Flexible Dough Scraper
The Gi.Metal flexible dough scraper is a professional tool with a tempered stainless steel blade (8x20 cm) and a food-grade polymer handle. It lifts, portions and cuts leavened dough directly inside proofing boxes and on the marble or steel work surface, gathering every residue without scratching the surfaces.
What a flexible dough scraper is
The dough scraper (raschietto in Italian) is one of the oldest hand tools of the bakery trade. The flexible version, with a thin springy steel blade, is preferred by pizzaioli because it slides along the curved walls of dough tubs and detaches the proofed dough ball cleanly, without tearing the gluten network.
The manufacturer Gi.Metal
Gi.Metal was founded in 1986 as a small blacksmith workshop in Montale, in the Pistoia province of Tuscany. In just over three decades it has become the world leader in pizzeria tools, with more than 1,000 product references exported to 85 countries on 5 continents and over 3,000 distributors. Production is 100 percent Made in Italy and the company holds ISO 9001:2015 quality certification.
Features
The blade is made of tempered AISI stainless steel, flexible enough to follow the shape of the container yet resilient enough to cut through firm dough. The handle is moulded from a polymer highly resistant to heat, impact and scratches, certified for food contact, with an ergonomic grip for comfortable use during long shifts.
Professional uses
In a pizzeria it is used to portion balls of dough, to detach proofed dough from plastic boxes and to scrape and clean the work surface between batches. In a bakery and pastry shop it cuts and folds soft, sticky doughs, divides brioche and viennoiserie masses and cleans bowls. The flexible blade is also ideal for smoothing creams and spreading fillings.
Pairings
This scraper works hand in hand with the rest of the pizza station: dough boxes, pizza peels, flour for leavened products, fresh yeast and extra virgin olive oil. Discover the full Gi.Metal range and the professional ingredients available on LAPA.
