The Evoluzione S.H.A is a professional rectangular perforated pizza peel with a 36x36 cm head and a 180 cm handle, made from Special Hard Anodizing treated aluminium. It is designed for high-volume pizzerias and bakeries that bake in deep wood-fired or electric ovens, where reach, lightness and a clean release of the pizza are decisive.
What S.H.A. Special Hard Anodizing means
S.H.A. stands for Special Hard Anodizing, a hard oxide anodizing that protects the aluminium against corrosion, wear and friction. The head delivers heat resistance three times higher than standard anodised aluminium and an extremely low friction coefficient, so dough and baked pizzas glide off without sticking or tearing.
The perforated head advantage
The optimised perforation discharges excess flour in two directions before the pizza goes into the oven. Less flour on the oven floor means no burnt, bitter residue on the base of the pizza and a cleaner cooking chamber. GI.METAL was the first company in the world to develop perforated peels.

Care and durability
