What Are Spaghetti alla Chitarra N.104?
Rummo Spaghetti alla Chitarra N.104 are durum wheat semolina pasta with a distinctive square section, inspired by the Abruzzo tradition where the pasta is cut on a chitarra, a wooden frame strung like a guitar. Despite the name, this is a semolina pasta with no egg. It comes in 500 g packs, in a case of 24, and cooks in about 12 minutes.
Rummo and Lenta Lavorazione
The pasta is made by Rummo in Benevento, a pasta maker founded in 1846. Its patented Lenta Lavorazione (slow processing) method controls mixing, drawing and drying so the pasta keeps a firm bite and reliable cooking hold, an advantage that matters in busy professional service.
Square Section and Bronze Surface
The square section gives the chitarra more surface than a round spaghetto, and the bronze drawing adds a rough, porous texture, so the sauce clings on every side. This makes it the classic match for amatriciana, full-bodied tomato and meat sauces and creative signature dishes.
Professional Uses
- Amatriciana, cacio e pepe and Roman-Abruzzese classics.
- Full-bodied tomato and meat sauces.
- Creative signature pasta dishes.
- High-volume service needing a sauce-gripping long pasta.
