Stracciatella gelato takes its name from the Italian verb stracciare, to shred: a sweet fior di latte (whole-milk) base into which molten chocolate is poured during churning. Stracciatella was created in 1961 in Bergamo, in Lombardy, by Enrico Panattoni at his gelateria La Marianna. The name was inspired by stracciatella alla romana, the egg-drop soup in which beaten egg forms ribbons in hot broth. Panattoni applied the same idea to gelato, streaming hot chocolate into the churning fior di latte.
