Ristoris Red Beetroot Wave-Cut 2.5 kg Case 3 – Quick Overview

Italian pre-cooked red beetroot in wave-cut slices, 2.5 kg professional tin (drained 1.5 kg), case of 3 (7.5 kg), distributed by Ristoris (Cremona). Convenience product for canteens, hotels and gourmet restaurants that want the colour and earthy flavour of beetroot without preparation time.

Origins and Tradition

Red beetroot (Beta vulgaris) is a vegetable cultivated in Italy and Central Europe since the Middle Ages. Preserved cooked in tins, it originated in the early 20th century in Russia and Poland for year-round consumption of **borsch**. In Italy, it became a catering standard in the 1970s and 1980s. The wave cut ("crinkle cut") provides a greater surface area for absorbing dressings and enhances the visual appeal on the plate.

Professional Uses

South Tyrol PDO beetroot salad (revisited): slices + goat cheese + walnuts + acacia honey + Aceto Balsamico di Modena IGP. Gourmet Vitello Tonnato with crinkle-cut beetroot. Vegetarian carpaccio with Stracciatella and extra virgin olive oil. Detox smoothie: 200 g + apple + ginger + lemon. Gourmet burger with crinkle-cut beetroot instead of tomato. Pink beetroot hummus: blend 300 g + chickpeas 200 g + tahini 50 g. Pink beetroot risotto (Bottura creation). Vegetarian sushi. Adapted borsch. Garnish: flower-shaped slices on white plates.
