Friarielli for the sausage pizza, San Marzano and datterini for the sauce, artichokes and grilled vegetables in oil, olives, and antipasti that come out of the tin already plated. Fresh, frozen and preserved, whichever the dish needs.

Which tomato for which sauce

San Marzano peeled tomatoes are long, low in seeds and low in acid — the pizza sauce standard, crushed by hand, no cooking needed. Datterini are sweeter and denser, better for a pasta sauce that has to hold. Pelati for volume, passata when you want no texture at all.

A short season and almost nobody in Switzerland carries them consistently. We do, and pizzerias plan the menu around it.
