Torchio Antico 100% Italian Extra Virgin Olive Oil
Torchio Antico extra virgin olive oil in the 250 ml format is a 100% Italian, cold-pressed oil with a light fruity profile and low acidity, produced by the Primoljo mill in Salento. Mechanical cold pressing preserves polyphenols, vitamin E and aromas: a versatile oil, perfect both raw and to finish dishes, designed for pizzerias, restaurants, delicatessens and demanding tables.
What is extra virgin olive oil
Extra virgin olive oil is the highest category of olive oils: it is obtained exclusively from olives by mechanical means, without solvents or excessive heat. The extra virgin designation requires a maximum free acidity of 0.8% and the absence of organoleptic defects. Torchio Antico belongs to the superior category obtained directly from olives and solely by mechanical means, with a light fruity profile that makes it suited to everyday use in the kitchen.
Origin: Salento and the Primoljo mill
Torchio Antico is born in Casarano, in the province of Lecce, in the heart of Salento, one of Italy's most renowned olive-growing regions. The brand belongs to Primoljo (Primiceri Olio dello Jonio S.r.l.), a family business that has been producing oil since 1970, when the founder bought his first mill. The company has invested in a modern mill with low oxidative impact, capable of preserving the oil's nutritional characteristics, and exports to Europe, Japan and the United States. The olives are grown and extracted in Italy: the 100% Italian designation guarantees a national supply chain from harvest to bottling.
Organoleptic characteristics
The profile is lightly fruity, with delicate herbaceous notes and a smooth finish, low in bitterness and pungency. This delicacy makes it an extremely versatile table oil: it does not mask the flavours of the finest dishes but accompanies them, enhancing vegetables, fresh dairy, fish and white meats. The colour ranges from golden yellow to soft green, typical of cold-extracted oils from Southern Italy.
