What is Rummo Lenta Lavorazione?
Lenta Lavorazione is Rummo's certified slow-production method: the dough is kneaded slowly and the pasta dried gently over long cycles, which protects the gluten network and gives an exceptional cooking resistance. The result is a pasta that stays al dente even when slightly overcooked or held for service, with a clean wheat flavour and a surface that grips sauce. The method is certified by Bureau Veritas.
Rummo, pasta since 1846
Pastificio Rummo was founded in 1846 in Benevento, in the Campania region of southern Italy, and is one of Italy's historic pasta makers. It works durum wheat semolina with water from the Sannio valley and the Lenta Lavorazione method handed down over generations. Cooking
Cook the farfalle in plenty of salted water, about 1 litre and 10 g of salt per 100 g, for around 12 minutes for al dente (double cooking: 6 minutes plus 1 minute on rewarming for batch service). Thanks to Lenta Lavorazione the pasta tolerates holding and rewarming, so it suits banqueting and high-volume service without losing its bite.
Professional uses
Farfalle hold light, creamy and oil-based sauces well: cream and pea, smoked salmon, pesto, light tomato and vegetable sauces. The bow-tie shape is a classic for cold pasta salads with mozzarella, tomatoes and basil, and an attractive plate for buffets. Allow about 80 to 100 g per portion as a main course.
