Character and quality
The bronze-drawn surface is matt and rough to the touch, the colour a pale straw yellow typical of slow low-temperature drying, which preserves the aroma of durum wheat. In the pot the shape stays firm and releases the right amount of starch, ideal for creamy, risotto-style finishes. The 14% protein content guarantees structure and digestibility.

Cooled under running water, it also works in cold pasta salads with tuna, capers and Datterino tomatoes. Drain it one minute early when it will continue cooking in hot soup.
