What Swiss mustard is
Swiss table mustard is a smooth condiment made by grinding mustard seeds with vinegar, salt and spices. The mild-spicy (mi-forte) version balances the pungency of the seeds with a soft, creamy texture, making it more versatile than sharp Dijon styles and ideal for everyday foodservice use.
Origin: the mustard of Aigle
This mustard comes from Aigle, in the canton of Vaud, where mustard has been produced since the 18th century. The Rhone plain around Aigle has a long tradition of vinegar and pickled products, and the town is historically linked to Swiss mustard making.
The producer: Hugo Reitzel
Reitzel was founded in 1909 by Hugo Reitzel, who acquired the Rochebord estate in Aigle and continued the production of the famous Aigle mustard. Today the historic Aigle factory is the last vinegar-preserve cannery in Switzerland, producing mustards, sauces, vinegars and pickled vegetables. The Hugo Reitzel brand is a reference for quality in both restaurants and retail.
Sensory profile
Bright yellow colour, smooth and spreadable texture, balanced aroma. The flavour is mild with a gentle spicy finish: assertive enough to season, soft enough not to overpower delicate dishes.
