Velvet Spray Celeste by PZ FLOR is a ready-to-use cocoa butter spray that gives modern cakes, semifreddi, mousses and entremets a flawless light-blue velvet finish. The colour is AZO FREE and the product is GLUTEN FREE, with a 100 ml aerosol (77 g net). The velvet effect is produced by thermal shock: the warm cocoa butter spray meets the frozen dessert and crystallises instantly into a soft, matte coating.
What it is
A professional pastry finishing spray made of cocoa butter and colouring, designed to reproduce the velvet (velluto) effect used in modern patisserie. It is produced by Floreal, a Milanese company founded in 1961 and specialised in artistic decorations for pastry.

Organoleptic characteristics
Light-blue (celeste) matte finish with a fine, even velvet texture. The cocoa butter base adds a subtle softness without altering the flavour profile of the dessert. The colour is obtained with AZO-free colourings (E170 and E133).

Professional uses
Ideal for finishing frozen desserts straight from the freezer: entremets and modern cakes, mousse cakes, semifreddi, gelato cakes and pralines. Warm the can in hot water to melt the cocoa butter, then spray an even layer onto the cold surface from about 20-25 cm. The colder the dessert, the sharper the velvet effect.
Pairings
Combine with mirror glaze for two-tone designs, or use over white chocolate and cocoa butter coatings. Works alongside silicone moulds, dosing tools and other PZ FLOR finishing sprays.
