Made using the traditional Gragnano method — slow drying at low temperature — this pasta develops a rough, porous surface that captures sauces perfectly, from classic pesto alla Genovese to heartier meat ragù.

Made only with durum wheat semolina and water, cooks al dente in 12 minutes. Supplied in a carton of 8 x 500 g packs (4 kg total), ideal for restaurants and trattorias.
