What the Taggiasca Olive Is
The Taggiasca is a small, fleshy olive of the Ponente Ligure, the western Riviera around Imperia. Documented and cultivated since the Middle Ages, it owes its name to the village of Taggia, where Benedictine monks spread its cultivation. Unlike most table olives cured in brine, the Taggiasca is traditionally preserved in oil: this is what gives it its rounded, mild, slightly nutty profile. It is the same olive that produces the celebrated Riviera Ligure extra virgin olive oil.
Geographic Origin
The Taggiasca cultivar belongs to the Ponente Ligure, the coastal hills of the province of Imperia in Liguria. The harvest, traditionally late and partly by hand, yields a small olive with a high pulp-to-stone ratio, ideal for pitting and oil curing. This product is made and packed in Italy.
