What gnocchi are

Rummo S.p.A. is based in Benevento, in the Campania region of southern Italy. Founded in 1846 by Antonio Rummo, who built his first grain mill on the rivers of the Sannio, it is one of the historic names of Italian pasta and celebrated its 175th anniversary in 2021. The dough is soft and delicate, pale ivory in colour, with a clean potato aroma. The marked ridging gives the surface grip, so creamy and tomato-based sauces cling instead of sliding off. Dress with butter and sage and a grating of aged Parmigiano Reggiano for a one-minute classic plate. Pair with a slow meat ragu, with gorgonzola melted in cream and finished with walnuts, or with a pesto alla genovese for a quick vegetarian first course. Bake them gratin-style with tomato and fior di latte for an alla sorrentina version. For service, undercook by 30 seconds, refresh and finish to order in the sauce pan.
Common mistakes to avoid
Do not overcook: drain the moment the gnocchi float to the surface, otherwise they break apart and turn sticky. Do not boil them in too little water (use at least 3 litres per 500 g) or they release starch and clump. Do not dress them with a cold sauce: finish them directly in the hot pan with the sauce so it coats the ridges.
