These Spaghetti are Pasta di Gragnano PGI by Di Martino, made from 100% Italian durum wheat semolina in the special pink Barbie edition. The 1.7 mm spaghetto comes in 500 g packs, in a case of 24, and cooks in about 8 minutes al dente. The PGI mark guarantees the pasta is produced in Gragnano, the historic pasta town near Naples.

The pasta is made by Pastificio Di Martino in Gragnano, in the province of Naples, the home of Italian pasta. Pasta di Gragnano PGI is a protected designation: it must use Italian durum wheat and local spring water and follow the traditional bronze-drawing and slow-drying process, which is what gives the pasta its character.
Bronze-Drawn, Slow-Dried
The spaghetti are drawn through bronze dies, which leave a rough, porous surface instead of a smooth one, so the sauce clings to every strand. Slow drying at low temperatures protects the wheat aroma and gives a firm bite that holds well in service, even in high-volume kitchens.
