Rinforzo Caffè is a sweetened liquid coffee extract by Elenka in a 2.6 kg professional bottle. What it is
A concentrate obtained from selected coffee extract, balanced with glucose. The label is short: glucose, plant extracts, coffee extract, flavourings and caramel colour E150d. It is a semi-finished product for food laboratories, not intended for direct consumption. Compared with brewing espresso in the lab, the extract gives a constant roast profile in every batch and removes the variable of grind, machine and barista.

In gelato: 10 g per kg of mix to reinforce an existing coffee base, or 20 g per kg when no coffee is used — also the reference dose for the cappuccino flavour. In pastry: 20 g per kg of cream or whipped cream for tiramisù, semifreddo, bavarois, mousses and filling creams. Dose cold, directly into the mix or cream: the extract incorporates quickly and evenly. Common mistake to avoid: overdosing, which pushes the roasted note over the dairy base and unbalances sweetness.
