What Is the Pinsa Romana Base?
The DAGO Pinsa Romana Gourmet Base is a pre-baked pinsa base in the large 23x36 cm format, weighing 235 g, supplied in a case of 24. Pinsa is the Roman-style flatbread known for being crisp outside and airy and light inside, the result of a high-hydration dough and a long fermentation that makes it easy to digest. This version is vegan.
Made in Switzerland by DAGO
The base is made by DAGO Pinsa in Winterthur, in Switzerland, by hand. The dough blends wheat, rice and soy flours with sourdough and olive oil, then is pre-baked so the kitchen only has to top and finish it. Note that the origin is Switzerland, not Italy, even though the style is Roman.
How to Use It
Top the base raw with your sauce and ingredients, then bake for 4 to 7 minutes at 220 C or above until the edge is crisp and the toppings are hot. Add fresh items such as stracciatella, cured ham or rocket after baking. The pre-baked base means no in-house dough, faster service and consistent results.
Professional Uses
- Gourmet pinsa with tomato, mozzarella and creative toppings.
- Finished after baking with stracciatella, cured ham or rocket.
- Pinsa al taglio for aperitifs, buffets and events.
- Fast base for high-turnover service with no dough preparation.
Storage and Allergens
Keep the base refrigerated below 5 C. It is a vegan product. Contains gluten (wheat) and soy. Always check the pack label of the lot for the full allergen statement before serving.
