What Are Paccheri
Paccheri (from the Neapolitan word for a wide, open-handed slap) are oversized tube-shaped pasta, typically 4 to 5 cm in diameter, born in the cuisine of Campania. Their generous calibre was historically used to serve few large pieces per plate, and today they are prized because the hollow cavity captures sauce inside and out. The fresh version, made with durum wheat semolina and water, has a tender texture and a faster cooking time than the dried equivalent, while keeping the firmness needed to stand up to bold condiments.

Pastificio Stroppa was founded in 1968 near Milan from the desire of a father and son to craft superior fresh pasta and gnocchi by hand. The company is now run by the third generation of the family and earned its organic production certification in 2002. Sensory Profile
The product shows a typical pale-amber colour, a clean wheat aroma and a soft consistency. The surface of these paccheri is smooth (pacchero liscio), so the sauce clings to the inside of the tube and to the broad outer wall. Cooked correctly, the pasta keeps a pleasant chew without becoming gummy, releasing the natural sweetness of durum wheat.

The pasta must be kept refrigerated at +4 °C and has a commercial shelf life of 90 days. Production is controlled under an HACCP system in accordance with Reg. EC 852/04, with chemical and microbiological analysis carried out at an Accredia-accredited laboratory, and the product is certified GMO-free.
