What Is Taleggio PDO?
Taleggio is a cow's milk soft cheese with a washed rind, protected by a PDO (Protected Designation of Origin). This is a whole wheel of about 2 kg with a thin pinkish rind and a paste that runs from white to straw-yellow, softer just under the rind. The flavour is mild and buttery with a light tangy note, sometimes with a faint truffle-like finish.
Auricchio, Lombardy Cheesemaker
The Taleggio is made by Auricchio in Cremona, in Lombardy. The PDO area covers provinces in Lombardy and parts of Piedmont and Veneto, and the wheel is matured for at least 35 days with a weekly wash in salted water that develops the rind and the aroma. The ingredients are simply cow's milk, salt and rennet.

Storage and Allergens
Keep the cheese refrigerated between +1 and +4 C and take it out about an hour before serving so the aromas develop. Contains milk and dairy. Always check the pack label of the lot before serving.
