What Is Provolone Dolce
Provolone is a stretched-curd (pasta filata) cheese from the Italian dairy tradition: the curd is spun in hot water, shaped and left to mature. Auricchio: Provolone Makers Since 1877
Gennaro Auricchio founded the company in 1877 in San Giuseppe Vesuviano, near Naples, with a secret rennet recipe still known as the secret of Don Gennaro. In 1949 the headquarters moved to Cremona, in the heart of the Po Valley dairy region, and since 1976 production has been concentrated at the Pieve San Giacomo plant, which receives about 400 tonnes of milk a day from farms within a 100 km radius. Today roughly half of the provolone sold in Italy is made by Auricchio.

Straw-coloured, compact, semi-hard paste; delicate, milky, slightly sweet flavour with no sharpness. The rind is surface-treated (natamycin E235, potassium sorbate E202) and is not edible. In the oven it melts evenly without releasing excess fat, forming an appetising golden layer.
