Finocchiona PGI by Bernardini
Finocchiona is the Tuscan cured pork salami flavoured with fennel, here a Protected Geographical Indication (PGI) half piece of about 1.5 kg by Bernardini Gastone. Soft, fragrant and aromatic, its hallmark is the warm, sweet note of fennel seeds and flowers.
What is Finocchiona PGI?
Its origins are medieval: Tuscan peasants replaced costly black pepper with the wild fennel that grew in their fields. The PGI disciplinary allows specific pork cuts (shoulder, belly, throat, coppa trimmings) seasoned with fennel seeds and flowers plus salt, pepper and garlic, with a short but key aging that keeps it soft and fragrant.
How to use it in the kitchen
Slice it for charcuterie boards and aperitivo, layer it in panini and schiacciata, or pair it with pecorino, fresh figs and a Tuscan red. Its fennel aroma makes it a distinctive alternative to plain salami.
