What Are Trofie and Strigoli
Trofie are a variety of Ligurian pasta shaped like small, elongated, twisted dumplings, officially listed among Liguria's Traditional Agri-Food Products (PAT) and historically tied to Genoa and its province. Strigoli (stringoli) are a short, irregular pasta format from the Italian tradition. Both belong to the great heritage of Italian pasta: since the Middle Ages, Genoese merchants, known as fidellari, made Liguria a leading hub of pasta craft thanks to its ideal microclimate for drying.

Drop the pasta straight from frozen into abundant boiling salted water, using at least 1 litre of water and about 10 grams of salt per 100 grams of pasta. For rich sauces, drain at roughly half cooking and finish by sauteing in the pan with the sauce over high heat to create a creamy, starch-bound emulsion. For delicate herb sauces such as Genoese pesto, never heat the sauce: toss cold, directly in the serving dish, to keep the basil aroma and prevent the fats from separating.
