Amulya IQF Baby Octopus 13/20: Uniform Portions, Zero Waste
Whole, cleaned indo-pacific baby octopus (Octopus membranaceus), size 13/20 pieces per kg, individually quick frozen and packed in a 5.4 kg carton with 6 inner bags of 900 g. Wild caught in the Indian Ocean and selected under the Amulya brand by Fredditalia International, this is a ready-to-cook staple for seafood restaurants, pizzerias with a fish menu, caterers and delicatessens in Switzerland.
What Does IQF Mean and Why It Matters
IQF stands for Individually Quick Frozen: each baby octopus is frozen separately at very low temperature within hours of processing, instead of being frozen in a single block. Fast freezing forms micro-crystals that respect the fibre of the mollusc, keeping the meat tender after cooking, and the pieces remain loose in the bag, so you can portion exactly what the service requires and put the rest back in the freezer at -18 °C.
The 13/20 grading means 13 to 20 pieces per kilogram: small, uniform octopus that cook evenly and look consistent on the plate, service after service.
The Amulya Brand by Fredditalia International
Amulya is the frozen seafood brand held exclusively by Fredditalia International, a company founded in 1970 in Castiglione della Pescaia, on the Tuscan Maremma coast. With over 40 years of experience in fresh and frozen seafood for the catering and retail sectors, Fredditalia selects squid, cuttlefish and octopus lines under the Amulya label, a reference name in the Italian food service market.
Origin and Processing
These baby octopus are wild caught in the Western and Eastern Indian Ocean (FAO fishing areas 51 and 57). They arrive whole and already cleaned: no gutting and no waste in the kitchen, and the declared 5.4 kg is net weight without glaze. Allergen information: molluscs.
How to Use Baby Octopus in the Professional Kitchen
Baby octopus is one of the most versatile molluscs in Italian seafood cooking. Classic applications include:
- Polipetti alla Luciana: the Neapolitan classic, baby octopus gently stewed in tomato, garlic, chilli and parsley, served with toasted bread or fresh pasta.
- Seafood salad: blanch, cool and dress with extra virgin olive oil, lemon juice, celery and parsley for the classic insalata di mare.
- Risotto and pasta: add to risotto alla pescatora or spaghetti allo scoglio in the last minutes of cooking to keep the texture.
- Grill and fry: after a short pre-cooking, grill over high heat or coat in semolina and deep fry for fritto misto.
Recommended portion: about 4 to 6 pieces (150-180 g) per starter, 200-250 g for a main course. Thaw overnight in the refrigerator at 0-4 °C, drain well, never refreeze and use within 24 hours of thawing.
Storage and Food Safety
Store at -18 °C in the original carton. The 6 separate 900 g bags protect the product from temperature shocks every time the freezer door opens and let you manage stock rotation bag by bag. Once thawed, the product must not be refrozen and must be cooked within 24 hours, in line with HACCP practice for frozen molluscs.
