What Are IQF Frozen Broccoli Florets?
IQF Frozen Broccoli Florets are selected broccoli heads cut into uniform florets and individually quick-frozen (IQF) at -18 C. The professional format is a 4 kg bag, packed two bags per case for a total of 8 kg. Because each floret freezes separately, the product stays loose in the bag, so you portion only what you need and avoid the waste of frozen blocks.
Nutritional Profile
Broccoli is one of the most nutrient-dense vegetables in professional cooking. Per 100 g the florets provide just 28 kcal (119 kJ), 0.4 g of fat, 1.8 g of carbohydrates, 3 g of fibre and 3 g of protein, with only 0.03 g of salt. This makes them a light, naturally low-calorie side that fits vegetarian, vegan and balanced menus alike.
Professional Kitchen Uses
- Sauteed side: 150-200 g per portion, 5-7 minutes in a hot pan with garlic and oil, straight from frozen.
- Soups and veloutes: 100-150 g per portion, 10-12 minutes in boiling stock.
- Pasta dressing for orecchiette or strascinati: about 120 g per portion, 6-8 minutes, tossed with the pasta.
- Steam or blanch for buffets and gastronomy: 5-7 minutes in steam or lightly salted boiling water.

Cooking from Frozen
The florets are designed to be cooked directly from frozen, with no thawing step. Cooking from frozen preserves colour, texture and vitamins and keeps the kitchen workflow fast, with most preparations ready in 5 to 7 minutes. Avoid thawing before cooking, as this softens the florets and dulls the bright green colour.
Storage and Cold Chain
Keep the product frozen at -18 C throughout storage, transport and display. Once thawed it must not be refrozen. The unbroken cold chain protects food safety and keeps the florets firm and separate until the moment of cooking.
