The artichoke (Cynara scolymus) is one of the great vegetables of the Italian table, prized for its tender heart and unmistakable slightly bitter note. Apulia is among the regions with official geographical recognition for this vegetable, alongside Campania, home to the Carciofo di Paestum IGP and the Carciofo brindisino.

These artichokes are grown and processed in Apulia, in the heart of southern Italy's vegetable-growing tradition, where the warm climate and the long season give the heads their firm texture and clean flavour.

Spirito Contadino is a third-generation family farm based in Borgo Tressanti (Cerignola, Foggia), in Apulia. The fields are monitored from sowing through harvest, cleaning and preparation, respecting the natural rhythm of the seasons. Sustainability, quality and traceability are the pillars of the company, which freezes its vegetables with the IQF method to preserve their organoleptic and nutritional properties.
