Mozzarella di Bufala Campana is a fresh pasta-filata cheese made exclusively from buffalo milk. Since 1996 it has been protected as a Protected Designation of Origin at European level; the Consortium for Protection that oversees its production and trade was established in 1981. The PDO territory covers the entire provinces of Caserta and Salerno, part of the provinces of Naples and Benevento in Campania, part of the provinces of Latina, Frosinone and Rome in Lazio, part of the province of Foggia in Puglia, and the municipality of Venafro in Molise.

Caseificio Giffoniello has processed cow and buffalo milk since 1985, with its production plant in Battipaglia, in the province of Salerno, at the heart of the PDO zone.
