What Is Parboiled Rice
Parboiling is a hydrothermal treatment applied to paddy rice before milling: the grain is soaked, steamed and dried, so part of the nutrients of the outer layers migrates into the kernel. The result is an amber-coloured grain that stays firm during cooking, resists overcooking and can be held for service longer than untreated white rice. This is why parboiled rice is the standard in collective and professional catering.
The Ribe Variety
Ribe is a classic Italian fino rice variety with a slender, tapered medium-long grain. In its parboiled version it keeps the grains well separated after cooking, which makes it the preferred choice for cold rice salads, timbales, boiled rice sides and banqueting lines where the rice is cooked ahead and finished later. It is not suited to creamy risotto: the parboiled kernel releases very little surface starch, so for risotto choose Carnaroli instead.
