What Is Stracciatella?

Stracciatella is a fresh stretched-curd (pasta filata) cheese mixed with cream. It is made by tearing fresh pasta filata into strands and binding them with cream, and it is the soft, creamy heart you find inside a burrata. It comes in a 1 kg tub and is a savoury fresh dairy product, not a dessert or an ice cream flavour.

Latticini Tamburro, Molise

The stracciatella is made by Latticini Molisani Tamburro in Baranello, in the Molise region. As a fresh dairy product it is made with pasteurised milk, cream, salt, rennet and lactic cultures, and it should reach the table within a few days, kept cold throughout.
